This wine’s journey began with Pinot noir grapes harvested in mid-September, carefully selected and double hand-sorted to ensure only the finest fruit made it into our production. The whole clusters were gently pressed and cold-fermented to extract the delicate flavors and aromas. Following this delicate process, the wine underwent a maturation journey in neutral oak barrels for two months. This careful aging process added depth and complexity to the wine while preserving its vibrant freshness. At the time of bottling, the wine received a 4.5 g/L dosage and was carbonated as part of the bottling process.
